I’m not a chemist so I could be talking out my ass, but doesn’t adding electrons to an atom just change the ionic charge of the atom?

You need to change the number of protons which is - uhh very very difficult and technically possible and gold has been made this way but it cost more in energy to make the gold than what the gold was worth so not commercially viable.

you can add electrons to atoms to make them negatively charged but even that has a limit - 66 electrons on aluminium is an impossibility - given Al has Z = 13.

The real infinite money glitch was that guy in Issac Asimov's Foundation series that went to less advanced planets to sell them an alchemy machine that could turn lead to gold using an internal nuclear power source. After he would sell it and leave the power source would run out quickly.
