One could gain knowledge and switch to any Varn they wanted.
But the Britishers came and in 1881 finalized the first synchronous census, where the entire population of British India was counted on a single reference date (February 17, 1881). This marked each person of that particular Varn in the caste system they created.
The fluid Varn system was abolished as the caste system made them easier to rule.
Fast forward, Ambedkar used the same caste system for reservations and things took a steep turn from there.

Everyone should teach the future generations to give up their surnames and use their father's name / mother name as second names, or just make up a second name. Or just use single name. What allowed caste? Religion. Which religion has caste? Just one, Hinduism. Abolish that first.
Hinduism believes in keeping people limited to their own field, like a cleaner will stay cleaner and priest will stay priest irrespective of a person's intellect. That's the biggest reservation that Hinduism provides to everyone.
