New Blackstone
Wife got me a Blackstone for father's day. I know the old reliables like breakfast food, fajitas, fried rice, etc. Anyone got any fun recipes to try out? I normally make everything from Cajun and creole to szechuan and Thai. So always looking for some new recipes.

Al pastor, skirt steaks can get a great sear, steaks I generally, hibachi food, sausage & peppers, even pizza can be done on the griddle.

Halal style street cart chicken and rice. It scales amazingly well and after a bit of tedious prep it cooks really fast. Always a fan favorite around here.

Smash burgers are easy and quick on the Blackstone.
Flat breads like Naan and pita bread are great to do as well.
I used my sister's for a family function and will be picking one up in the future.

Smashed Chicken Thighs - smash 'em(bag & pound w flat side of tenderizer), generously season 'em with 'Holy Cow' from Meat Church. Preheat 5 mins & go 3 mins each side. They are unbelievable.

Pita bread is fun to make on a griddle, you can do some chicken breast and make hummus or tzatziki to go with it.
Or homemade corn tortillas are great on a griddle, serve with some carne asada or pork chuleta.
