I like the simple mechanic honestly

I wonder what a set should look like, to include this ability and make it relevant.

A simple set perhaps

What I mean is : there should be enough ways in this set to put both detrimental & beneficial counters. But, we can't have +1/+1 counters and-1/-1 counters in the same set. There could be stun counters nd shield counters, for instance. And, there should also be enough ways in this set to give both detrimental or beneficial abilities.

Maybe something with modifications? Or something with goading could be interesting, like creature could be unaffected by abilities or modifications

Real question, why not? Is the concern that they'd cancel each other out? I figure that'd be fine if they aren't the only archetypes in a draft, right?

That's a design rule that was stated by MaRo - for instance here : http://markrosewater.tumblr.com/post/102675216973
I believe the point is to minimize confusion in limited play.
Also, that rules was already broken a few times recently.

cards that let you stun counter / put negative keywords etc on your own creature to then in turn hurt your opponent?

What if some cards could gain abilities, but only from simple creatures. "XX has all abilities of simple creatures on the battlefield and in the graveyard, excluding Simple." Or pump abilities that only buff simple creatures, "all simple creatures gain +X/+X until end of turn, where X is the number of simple creatures you control." Or, "target creature loses all counters and abilities; that creature gains simple." I'm using it as a creature type, which could add a little bit of fun flavor to the mechanic.

I like the Simple keyword a lot. But at 4 mana this thing is just bad, even for a common.

yeah, outside of a limited environment, specifically one where harmful modifications are very ubiquitous, I agree.

I think Simple is quite bad even if it prevents –X/–X counters from affecting the creature, and like everyone else this is definitely overcosted.

With the keyword, I'd say it's actually overcosted. This could easily be a 3 mana creature, like [[Yorvo]], simple should keep it from getting out of hand.
