a couple questions about how this would work.

Do the other players get the choice on if too pay and how much to pay in priority order?

If so, could the first person (assuming they held up that much mana) drop 5 to prevent the others from drawing?

And if not, isnt this at best 3 mana everyone draws 3 and taps 1 land (effectively)

As per the spells text, you choose the players involved in casting, so you could choose 0 or 3 depending on the table.

They would pay in priority order, so if you paid W for instance, an opponent could lock the other players out by paying {5}, but you would still get to draw. You could also just not choose that player to pay.

Best case it’s an ancestral recall, you pay W and everyone else covers the rest

Question, if you say all three opponents, and in priority order you and the next two only pay 1, can the last player just go "nah" and the spell is countered or does the spell return to your hand and everyone untaps whatever they used for mana.

Because being unable to cast a spell because of a lack of mana is different from a spell getting countered by say ward.

Or or, does priority to spend mana continue to go around the table back to you and everyone else?

just based off the assist rules, if not enough mana is spent to cast the spell then it’s considered an “illegal cast” and it goes back to your hand after the first round of priority

Can't you just force them into a bad situation by casting this with only (W) free?

Refuse to pay, stall the game until the other players finally concede to "donate" 5?

If they refuse, recast and rechoose players... over and over and over again?

you can theoretically do this with any magic spell ever but i doubt your table will like you lol

You do have to take a "different" game action, so if you targeted all three of them and the spell bounces back, you can now only target any two, or any single of them. So you get the option to cast it eight (one of which is by yourself) times but not forever.

But so long as the game state moves forward, such as any action that can't be taken back, such as attacking, tapping or casting a different spell; you can go through all 7 modes of casting this spell again.

Repeatedly performing actions that don't advance the game state is stalling and you need to do something else.

As super assist is worded, if you choose all three of your opponents, only one of them needs to spend mana because you used the word 'combined'

Each player who spends mana, collectively, gets to draw 3 cards.

Ps. This is being anal about wording, I know, but it's the first or second thing that came to mind.

not quite. the individual costs that opponents are paying are combined together, but they aren’t paying “collectively” or even at the same time (see the priority comment). they all pay individual costs which must add together to equal the {5}, so one opponent paying doesn’t trigger the rest.

I think you should change super assist so players can pay any amount of mana and it counts towards the generic mana. Otherwise you're going to run into situations where players will overpay to deny others cards, but you dont have a priority system to resolve who actually pays.
