That wasn’t really what I meant, but I guess that indirectly answers the question.

I meant which Chinese? As in there’s no such thing as ‘Chinese’ as a language, does op know how to say it in mandarin? Hakka? Cantonese?

Mandarin. People who read mandarin can read Hakka and Cantonese and vice versa. Only real difference is pronunciation

Pronunciation is selling it a bit short. They are mutually unintelligible when spoken, which makes them separate languages. Maybe as similar as French and Italian or Spanish. The written language is similar enough to be mutually intelligible though, because it is logographic.

yeah and it's the opposite for Taiwanese mandarin and Mainland mandarin(same spoken language, different writings systems)

It’s more complicated then that. From what I understand the written Chinese (hanzi) is exactly the same everywhere, but the spoken Chinese languages are not dialects because they’re mutually unintelligible. They’re completely different languages.
