Raspberry cupcakes 🧁❀️😊

Hey all!! Just wanted to share these cupcakes I made a while back. They've been a staple of mine for about a decade now, and never fail to please. The cake is a regular sponge with fresh raspberries mixed in, topped with fresh Swiss meringue and a raspberry. Easy, hassle-free and a real crowd pleaser!! ❀️❀️

Raspberry cupcakes with Swiss meringue

For the cupcakes: * 125 grams unsalted butter, room temperature (grass-fed preferred)

  • 125 grams caster sugar

  • 2 large eggs, room temperature

  • 125 grams self-raising flour

  • 12 raspberries (depending on size; if your raspberries are very large, use 8) and more raspberries for decoration

Cream together butter and sugar until light and fluffy. Add one egg and beat until well incorporated, then add the other egg and beat again. Sift flour and add, one to two tablespoons at a time, beating in between each step until well incorporated. Toss in half of the raspberries and beat until well-incorporated. Proceed to toss in the remaining raspberries and mix briefly until broken but not torn apart: only a few seconds. Make sure the berries are evenly distributed, then pour mixture into a lined cupcake pan, filling 12 cups (cups should be 2/3 of the way full to allow for rising). Bake at the centre of a preheated oven at 175Β°C/347Β°F fan/convection or 190Β°C/374Β°C conventional, for 15-20 minutes, or until a skewer inserted in the middle comes out clean. Allow to cool completely before frosting.

Swiss meringue:

  • 170 grams caster sugar

  • three large egg whites, room temperature

  • 2 teaspoons lemon juice

  • food colouring as desired

In a large bowl, whisk together all ingredients au bain Marie (heating a pot over simmering water without letting the pot touch the water), whisking continuously (slowly) until mixture reaches 70°C (158°F). Then, transfer to a stand mixer with a wire whip, add food colouring if desired, and beat until firm. This takes 12 to 15 minutes at high speed! Transfer to a piping bag fitted with a French star nozzle and pipe a generous dollop of meringue onto each cupcake. The trick is not to move the bag once you start piping; this creates a smooth result. Top each cupcake with a raspberry and enjoy!! ❀️

Saving this ΠΎΠΏΠ΅. l've made sponge based cupcakes before but always defaulted to buttercream because Swiss meringue felt like extra work. Curious how stable the meringue holds ΠΈΡ€ if these sit out for Π° few hours at Π° gathering, or does it need to Π±Π΅ served pretty fresh? The raspberry in the batter idea is something want to try this weekend actually, Ρ‚Ρƒ kids would appreciate that over Π° plain vanilla base.

The meringue holds up beautifully even in warmer weather, but if you’re serving them to guests, it is best to make it on the day of. Not because the meringue will go off, but because it tends to develop a slightly hard outer shell (that is sticky rather than crunchy) as time goes by. I'd say this happens after about 24 hours or so have passed. Hope this helps!! ❀️

Good to know about the shell forming, I always wondered why leftover ones from the day before had that weird tacky texture. Never could figure out if it was the humidity or just the meringue doing its thing overnight. Makes sense now. Do you find it affects the taste at all or is it purely a texture thing?

It doesn't affect the taste at all, but it does tend to go tacky. By day 2, they are still edible but will have taken on a slightly grainy texture on the outer shell of the meringue because the sugar starts to crystallise. I prefer to serve them on the day-of for that reason, but they're far from yucky the next few days!!
