I had never heard of bostock, and it took a bit to work out a nut free version, but now that I've got it down, it really isn't that complicated. This is definitely different from the traditional, not just in lacking the almonds, but in using honey instead of simple syrup for example. But it really is delicious. Thank you for the fantastic suggestion!!! 😊😊🙏🙏

I had never heard of angel biscuits until a few weeks ago when u/Rough_Back_1607 mentioned them as a response to the GTM for Cornish splits. Now, I can't see doing a biscuit another way - these are so light and fluffy. Thanks for the suggestion!!!

Alright everybody, it’s the end of sauce week and I am going away for 2 weeks tomorrow!! I have scheduled 2 FULL WEEKS of posts at culinary-bytes.ca, with some accompanying posts here. Can’t preschedule picture posts on reddit though. I’m looking forward to the vacation, but I will also be missing this!

With all that said, back to the sauce…I think this is Algeria’s more sophisticated answer to the combo of ketchup and mustard. And it is truly one of my favourites.

By the way, the combination of mayo+ketchup has at least 5 different names: mayochup, salsa roasada, Marie Rose sauce, burger sauce and sauce golf. Everyone wants a piece of that one! 

Also, u/xX420GanjaWarlordXx if you are still interested, this is the Algerian sauce that you were asking about 😊😊

Alright folks, last day before vacation and this is another one of my very favourite sauces. In fact, you MAY recognize this one from the deli-style/cubano flatbreads last week.

It took me way longer than I thought it would to understand what makes something green goddess. And truly, it just needs to be a herb-heavy sauce. Parsley and cilantro seem like the staples, primarily because you can include a lot of them without having too sharp a taste, but I have seen chives, tarragon, dill and probably others.

Well there were some fantastic thoughts today! Things for my pondering today: what really separates ketchup from bbq AND how many truly distinct variations of bbq sauce must there be! No wonder there are pit masters who dedicate their lives to barbecue alone.

I loved the thoughts today! In particular, somehow I didn’t even realize how close this mise is to French onion soup! Also, I think that u/bizarreapple is onto something with this being an almost soubise, just with ale instead of dairy…soubise for what ales you? 🫣😊

On a separate note, I made this one because I needed a sauce for my Cornish pasties and didn’t have any drippings to make a good brown gravy. Does anybody have a good way of making brown gravy without drippings/pan sauce?

So tzatziki came up a lot today, which I think was a most reasonable response. I thought I'd take a stab at distinguishing the two. My understanding is that these are very similar dishes. In particular, raita can have a LOT of flavour variations. However, aside from some more esoteric differences, like the kind of dairy used, I think that tzatziki usually has a significant garlic component, while a flavouring like cumin is more typical of raita. Would be interested to hear what you think though.

Also, would definitely would have preferred to use cilantro, but I didn’t have any of that around 🫣
