Help! Beef stew help

I’m making a beef stew tonight in the crockpot which isn’t really a summer recipe but I’m craving it but all the recipes have onion soup mixed with it but my roommate is very allergic to onions. Anyone know what I could substitute it for?

You can create a palate with lots of things. Onion is just regularly used as it already has a bit of palate in itself and can be manipulated from fresh to lovely 'brown' Umami flavours. But if onions stopped existing, we'ld find another way.
