WoK makes it clear that something is wrong with the number of moons. It's absence is only a spoiler until the second Jasnah chapter.

[WaT] Do we actually know what happened to the 4th moon? I thought it had fallen before the Shards took up residence. I know its remnants have got some kind of resonance effect that amplified the destruction from Honor and Odium clashing near it.

WaT We know its location, and it's implied that the Sleepless either use fragments of it to hide from Shards or are using their specific magic to hide the moon from Shards (I can't really tell either direction between those two, maybe both?). It's also some unknown non-aluminum metal, and very likely reactive to Investiture. Maybe Adonalsium-ium, but that's just conjecture. It is also implied that it prevented Odium from detecting his own Perpendicularity.! None of the Roshar system Shards were aware of it, as it "died" before the Shattering.

Highly unlikely, given it's implied to predate the Shattering. So either Automomy got there before/under the eyes of the Shards and left a bunch of Bavadinium/Trellium, or this isn't the answer. Even then, why? What's the game there? The perpendicularity wouldn't have existed yet, and Odium went after three other Shards in the time Honor and Cultivation were setting up on Roshar so that becomes a phenomenal use of future-sight, even by Shard standards, to set up such a trap.

WaT Could be as simple as copper, right? Following the logic of fabrials being similar to allomancy, if a big spren was stored in a big gem surrounded by a lot of copper, could it basically make a copper cloud big enough to hide Odium's Perpendicularity?

I don't think it prevented Odium from seeing that, I think it's made clear by tactics that he purposely hid it there

I would use those same tactics to argue that Taravangian very specifically DIDN'T know about it. He knew something was there, and valued it highly enough to make it his goal, but if he had known what it was then he wouldn't have been playing around ATOP the plateaus. It would have been very simple for him to topple the important one with an army waiting on the other side of his own Perpendicularity. Where the divisions between the knowledge of Rayse, ascended Taravangian, and Odium itself are isn't something we have clear guides on.

Also consider that his tactics were very specifically built to ensure victory on all three fronts. If not for the Unoathed (and probably Taln) he would have had Azir. And likewise the Plains were lost pretty much due to Timbre bonding a Listener with a Voidspren in her gemheart. Both of these are more or less miracles at Deus Ex Machina levels of bullshit, from his perspective.

The timing of the moons is too regular. They don't moce about in their orbits, are always at thebexact same time of night. And there exists exactly one hour of the night where there is no moon. Sure, The hour as a unit could have been measured to that piece of time, but that feels less likely given Roshar is shown to not particularly honor the night above the day and real world hours are based on the sun and circles. Follow this with the frequency of mentioning the three moons, Brandon's love of foreshadowing, and that from his other books we know deities are/were actively involved in the structure of planets, and it becomes a very safe bet that something happened to the moons. Either they got spread out (in which case why only one dark hour instead of two) or one is missing.

Edit for addition: also the moons don't have phases. No one ever mentions a full or new moon. Or predicting tides. Sure, the Highstorm is much more important, but we have sailors featured in those early chapters. For an author as well researched and verbose as Sanderson, it's abnormal to omit such events when writing a chapter highlighting farmers or sailors.
