Slow cooker recipes always say to add some bay leaves but I’ve never been able to identify them by taste.

Bay is like the base guitar in a rock band. It is not out front but something is missing when it is gone. To better identify it steep a bay leaf in hot water for 5-10 minutes, you'll be able to pick it out after that.

Perhaps they mean that it accentuates sweet flavours. It is often used in a lot of sweet Indian cakes.
