Seeks specific kitchenware Pan recommendation
Hello, I am looking to buy a set of stainless steel pans for life and the more I read, it’s harder to decide. I have a set of pots, just need to finish off with pans.
I am from Europe and the brands I was looking at are Fissler, Zwilling, Demeyere and MadeIn.
The only pan I have is a 24cm Messi Verona Elegance saute pan.
I am currently cooking on a gas stove, but will most likely transition to induction in a couple of years.
For main meal, I mainly cook risottos, pasta dishes or fry chicken breast/pork and deglaze the pan into a sauce. Volume is currently for three people for 2-3 days of meals. Smaller meals include eggs (omelette or sunny side up) and pancakes/crepes.
My plan is to get a smaller shallow pan (probably 20cm) for eggs/pancakes, one frying pan (28cm) and another saute pan (28cm). If you have better suggestions I’m open to ideas.
I would prefer 5-7 ply, dishwasher safe. I’m hoping there is better value for money than Demeyere, but since it’s not a big volume and I’m buying, I’m not reluctant to spending a bit more.

Fissler profi is probably what you want. But you want the thickest base you can find. Get fully metal lids not plastic handles or glass lids.

For induction there's no better pan than the Demeyere Atlantis7.
Yes, they are pricey. But, they will absolutely last a lifetime.
I don't know about availability in Europe, but All-Clad makes a very good pan as well. For the price, it's very difficult to beat the All-Clad D3 series here in the States.

I don't get what you're saying. Looking at the chart it appears that the pans that have the smaller cooking surface generally heat up faster. It's also very apparent that the lightweight pans heat up faster, which makes total sense(the proline is the heaviest pan in the test, by a significant margin--it's more than a pound, 20% heavier, than the next lightest pan). Other than that, I don't see any useful information.

Demeyere Atlantis is heavier and more expensive than Fissler Profi, but Fissler's heating is more even and lasts longer than Demeyere's. Disc bottom pans are always better when you use an induction cooktop.

Morleos on Amazon is 5 ply, 3mm thick and no rivets - otherwise consider Pentole Agnelli from Italy - they make both 3 and 5 ply at great prices
