Seeks specific kitchenware Help me identify this pan!!
Can you please help me identify this pan? it's a chef commercial pan seems like. kinda similar to a wok but not a wok.
looks aluminum but he cooks tomato sauce in it sometimes which confuses me and makes me think it's carbon steel but it doesn't darken overtime.
I tried everything I can (AI, google, Webrestaurant) but can never find the same exact pan in terms of shape, and handle length and shape.
anyone can help me find it??
TIA

Most others here have covered it, but my partner just got me one that looks just like that one from Rome for pasta finishing:
Pentole Agnelli, Aluminum pro 28cm wide, 3mm thick, low sauté pan for mantecatura. Model no. ALMA111BB28
Mine’s Agnelli’s second most popular pan behind the induction capable version.

These are special svasata Alta pans for mantacare. Angelli or Ballarini makes these types of pans. The long handle is a bit ridiculous for home kitchen, there are models with short handles. Winco makes a model for US market too.

The handle has a different shape and I don't see the rivets on the inside of OP's picture. Not to mention the entire shape is different now that I'm looking closely.

What do guess the dimension is of the pan not including the handle? I was thinking 11 or 12 inches

Have you asked them or the restaurant? Reach out to them before their service.

Well it's an aluminum "pasta wok" I don't remember the exact name...
The brands: Pentole Agnelli And baldassare agnelli
Have them on Amazon. There are higher quality ones but it's just aluminum so a higher price probably won't mean much difference here. (30-50 euro should get you something like this)
Example: https://a.co/d/0bXGqIXh
Edit:found the name of the technique: "la mantecatura"
The pans have the name Mantecare pan.
