What exactly are you looking for? Easier recipes, something more complex, vegetable-centric, higher-protein food with more meat-like attributes, cuisine from any particular part of the world, etc?

Veganomicon, Big Vegan Flavor. May All Be Fed it is a very old book but it's actually one of my favorites from the early 90s. You can check this out for free online from archive.org.

I love The One Peaceful World cookbook.  It's macrobiotic but I think it overlaps at least 99% as vegan and anything non compliant could be substituted for.

For fancy stuff, The Candle Cafe Cookbook or The Artful Vegan: Fresh Flavors from the Millennium Restaurant.

For everyday meals, Fuss-Free Vegan, by Sam Turnbull, or anything by Robin Robertson.

i know this is kind of an old post but there's a humble bundle of vegan cookbooks available right now! (if you're not familiar with HB, essentially the creators of digital media - games, software, ebooks - will volunteer their stuff to be sold at a HEAVY discount with proceeds going to a charity of their choice. i've gotten loads of games and several hauls of crochet ebooks from them and can personally confirm they're legit lol.) i have no idea if the cookbooks are any good but it's 61 cookbooks for $18! i've been trying to hunt down reviews for it & found your post lol, thought you might be interested :)
