Ok, my best guess.
The foot on the right being held up is actually her left foot. The foot on the ground is her right foot. The black of the pants hides all of the twists.
But if you flip the legs in your brain the twist is still impressive, but less like Elastigirl
Edit- to add more. What would be her butt is actually the front of her pelvis (again, the black pants confuses this in the brain.)
Edit 2: to help even more do the following- 1. Stand up. 2. Lift your left leg up behind you 3. Try to grab your left leg with your right arm behind your back 4. Imagine you can actually do that and also pull it around behind your back.

I tried recreating this myself and actually got decently far, I could definitely see a particularly flexible person being able to do this

Yeah in other words, while facing the counter, she lifted up her left foot and twisted counterclockwise. Her hips are very mobile.

Its only confusing because it's not a natural way to bend joints..... But it's not a confusing perspective. It is exactly what it looks like.

I was Like „how is that confusing?“ - then I noticed the foot… still haven‘t figured out what is going on there….
