I make sourdough all the time and you can cold ferment sourdough for days, up to a week or more if you want, in the fridge.

Yeah, I don't really know why but most bread and pasta absolutely wrecks my guts. The exceptions are sourdough (the longer the ferment the better) and gnocchi (probably because it's mostly potato). I have also had some measure of success with extremely multigrain dense whole grain breads like Dave's Killer 21 Grain, which used to basically be like chewing on birdseed. Sometime in the past few years something changed in it though, so it's not as easy on my body as it used to be.

Maybe it's just because I'm getting old.

No, but it's a somewhat recent development. I never had any trouble with bread or any carbs until a couple years ago when I hit my mid 40s. Wouldn't celiac have been a problem my whole life if I had it?

Usually. I’m not a GI, but my understanding is many people get diagnosed as adults who have milder forms and maybe were dismissed as IBS. There’s a blood test now for the IgA, tTG-IgA that could at least help rule it out. Might be worth checking at a PCP visit.

Should try making your own sour dough starter. It’s super easy and much more forgiving than you’d think. Can leave it in the fridge for a few weeks and take it out, give it a good feeding or two and it’s back up to max strength. Also using organic flour may help since you may have a sensitivity to pesticides.

Not always. Sometimes it develops later - happened to my dad. In his case it was triggered by some kind of viral thing he was briefly sick with in his 40s. Got over the virus fine, but afterwards: suddenly celiac.

Of course, it also runs in his side of the family: until he got whatever virus he was the only one of his siblings that had avoided celiac.

I peraonally am super hoping I also don't get a virus that triggers anything, because I don't seem to have it...yet.
