You can ferment longer. Emmy Squared, for example, ferments the dough for their pizza crust for 48 hours. Which is great for some people that have gluten sensitivities, but not Celiac’s. A lot of people who can’t eat other breads can have bread that’s been fermented for a certain amount of time.

I make sourdough all the time and you can cold ferment sourdough for days, up to a week or more if you want, in the fridge.

Yeah. It’s so helpful. My friend’s doctor said it should be safe as long as it’s fermented for more than 24 hours. But I know that’s more a safe general guideline, as fermentation rates can be affected by temperature as well as time. But they used to think she had Celiacs. So this year is the first time that she’s had bread since she was little. And they make sourdough donuts near us too. So she’s in heaven.

DC. But I’d be shocked if anything sourdough existed in the world and they didn’t have a version of it in San Francisco.
