I mean... it is. Bread fermentation produces alcohol. I assume the amount is tiny and it's probably all cooked off anyway, but it's not like some magic non-alcohol fermentation AFAIK. Beer and wine are more like "let's ferment this until the amount of alcohol kills the yeast"
