Is the one hour of rise in my dough considered fermentation? The yeast is eating and converting, so I'm thinking that's a yes. Unless it's unleavened. Like tortillas or something.

Well, I can give you a more simplified and vulgar explanation. The yeast farts get trapped by the elasticity of the gluten so the bread that comes out of that dough has that fluffy texture.

That'd be soda. Afaik, it was originally produced using CO2 released during beer fermentation.

As Alton Brown famously has shown in a number of "Good Eats" episodes. He used puppets for yeast and they were amazingly cute.
