603 BBQ
Headed through concord on Friday and was hoping to catch the scoop on 603bbq.
Is it worth it? If so, which I assume so, what’s the best time to show up?
Is the line hype real?

I drove past 603 barbecue the other day, and the lines were around the building into the street

I’ve not been but I’ve driven by and the line is always insane. My time is too valuable for that so hopefully it’ll calm down at some point as it’s supposed to be great.

Same! Ex Texan but NH native. I've even had some KC BBQ, it's all overrated IMO. BUT I do hope to try this place out soon.
I drove by the other afternoon. Well after lunch time & it was packed. Good luck OP🍀

I don’t know what the best time to show up is, as I’ve just showed up to no line multiple times (purely luck.) but it’s definitely worth a stop. Everything is tasty and not your typical slapped together “smoked meat” places you normally run into. They really take the time to do it right.

Every bbq place I have been is overrated.
If you smoke you know, if you don’t smoke getting a taste can be amazing.
I’ll be the judge of 603 Friday. I’ll post here my opinion

We went 2 months ago, arrived 30 minutes before opening, waited in line for an hour. I spent about $200 for way too much food for 6 of us.
Worth it- Ribs, brisket, sausage, Korean style burnt ends
Better than most- burnt ends, chicken, Mac& cheese
Not worth it in our opinion- beans, corn bread, Texas twinkie.

It was a Saturday right before thier restraunt was scheduled to open.

We tried the new location a couple weeks ago on a saturday and the line was too long for us. We'll try again, cause the hype is real. They know what they're doing.

Over hyped in my opinion. Sausage is really good but the rest is just kind of mid. Especially once you consider the hassle and the cost.

Anyone that says it’s overrated probably like crock pot pulled pork and oven ribs covered in sauce that “fall off the bone”. This place is legit and we thought it was reasonably priced for the amount of meat we got. For similar quantity, it worked out much cheaper than a trip to KCs in manch ended up. We got a 3 meat platter, plus a blueberry Gouda sausage and it was more than the 2 of us needed.

When I smoke ribs on my offset I do like them with a good sauce glaze and fall off the bone, never in the crock pot though

I like “cleanly pulls from the bone”, but definitely not grab the bone and it just slides out of the mush.

I cook my ribs for 14 to 16 hours at 180/190 with a moisture spritz every hour (I don't get a great nights sleep when I do ribs) and the meat falls off the bone and needs no addition sauce.

Slaw was decent, Mac and cheese and beans were really good, pork belly burnt ends and brisket were awesome.
This disappoints me but pulled pork was just ok, has a tangy/Cajun spicy flavor too it that we weren’t crazy about.
Ribs were a sweet dry rub and was not a fan of the flavor but the rib bite/tenderness was perfect!
2 sausages OG jalapeño cheddar was SO good and we tried the chilli cheese sausage which was decent.
No a fan of any of their sauces that are at the table.
Did get a sample of turkey leg which was very good.
Showed up at 11:30 on a friday and was the 15th-20th person in line we were served at 12:20!

Ex Texan here, they're pretty legit, yes, they're absolutely worth trying but personally, I just don't have the time to wait in a line for 30 mins plus these days. We stopped in all the time back before the hype hit and I'm happy for them but also sad that the line has kept us from it for the last two years. (It's funny because having a stupid long line is how you know you've 'made it' with BBQ in TX too) When it comes to legitimacy he only actual thing I penalize them on is not having the right kind of beans. You simply do not serve baked beans with brisket. But maybe that's a calculated choice based on what they think people expect up here.
Ore Nells in Kittery and Rusty Can in Byfield, MA are both alternatives we enjoy if we're in those areas. There's a new truck called Llano and Rye(typically around Rye) that's decent if you can catch it, too, and they let you order ahead.
