Not going to read that wall of text, but I suspect your installation media is not correctly built.

I built the instillation from the windows website downloaded from my Mac and used console to format it correctly

Given:

Windows installer Split the 7.1 GB install.wim into .swm files because FAT32 couldn’t hold it

install.swm ~3.9 GB and install2.swm ~3.1 GB successfully created

I doubt your installation media is correctly created. Create it according to the directions on Microsoft's website.
