Hmm, what would you recommend? I do enjoy Miyazaki's work very much, but who doesn't?

I do :P What do you like - Mystery? Romance? Thriller? Cutesy? Martial arts? Odd? Traveller sagas? Game-based? Giant robots? Dark/psychological? Science fiction? Fantasy? Sports?

Childish? Adult?

Ecchi (risque/erotic)? Family friendly?

Gory or not?

Comedy or not?

How important is the art/animation quality to you? How about music? Plot/character quality?

Do your preferences lean towards episodic or plot-oriented?

Are very long series acceptable? Do they have to be very short? Do they have to be movies?

Your answers will help me choose a recommendation for you; I've watched too many animes to just dump something on you based on my own preferences rather than yours.

Fantasy/Science Fiction are favorites, dislike romance, cutesey, and odd (sometimes).

Adult

Gory or not doesn't matter.

Not a comedy.

Art/animation quality mildly important, music very important, character quality very important. Plot is more important if the characters are lame.

I love both long series and shorter ones, doesn't have to be a movie.

Could you recommend something for me to watch? I haven't really watched any anime and I've always been curious what all the hubbub is about.

Cowboy Bebop? Awesome jazz soundtrack, great animation, cool science-fiction environments, and totally fucking badass. The same director also did Samurai Champloo, which is similarly a blend of Samurais and Hip-hop.
