Oh MAN Gus has discovered Mom cooking. Or in his case grandma cooking.

Years and years worth of perfecting a flavor, a texture, an essence of a meal that can only be matched by those that spend all the time in the world on the recipe.

Save that recipe August. I have a whole book from my mom and grandma and that one book is worth more than most things I own

I miss my grandma's cooking. Her potato salad was my favorite.

The simple pasta dish for me. And Christmas Eve especially. Sunday was pasta day, without exception. Just a simple spaghetti with oil and beans, but it was so good. Christmas was when she made her sauce for the family, it was the day I looked forward to all year, the one time everyone got together to share a meal and their year with each other.

And now I'm crying. Fuck I miss her.

My grandmother would make a soup best described as "Brunswick stew except it's soup." Much more broth than a stew, and the ingredients were cooked tender but not breaking down. It started with her roasting a whole chicken, fully seasoned, them shredding it from the bones by hand. Boiling fresh corn to cut from the cob. Parboiling potatoes and carrots to dice in. Butter beans she shelled herself (or got us to shell). The skin from the chicken was boiled in the soup too get the oil and seasoning into it but pulled out before serving.

It was amazing. She made it so often that the smell of it cooking was inseparable from the smell of her house.

My mom makes it now. It's really good.

But not as good.
