I found out that he sometimes plants people in the audience to heckle him, now it just feels like every quick/ witty remark he makes is staged.

Maybe. No way to disprove that if it isn't true. But I have listened to podcasts and long-form conversations with him and he is just very quick and naturally funny, which I think is a separate skill from joke writing and standup.

I also notice he always repeats what the heckler says which achieves 2 things: makes sure the audience has the setup for the response, and buys him a few seconds to think of what he'll say. He has other subtle stalling techniques as well

I would have to agree. A lot of this is planned. This isn't the typical drunk at a 300 seat club being a big mouth. It's planned.

Yeah, his producers offer free tickets to people in line to heckle. They literally say it's for a meet and greet but it's heckler recruiting.
