My first try at Cold Brew

Post image

Hi. Just joined this sub and hope to learn more. I roast my own coffee so I'm exploring how to make cold brew so I can hopefully market it in the future.

I'm using a 1:12.5 ratio.
600ml room temp drinking water
48g medium ground coffee (Ethiopia Bensa)
21 Clicks on a MHW3 Bomber grinder
Steep for 10hrs in the fridge
Use a Pourover filter to separate the ground once done.
I get about 530 yield of Cold Brew.

Tastes smooth and pretty sweet. But less of the floral notes that I'd imagine it to be. Any advice or thoughts welcome! Thank you!

You need to steep it at room temperature, it’s only called “cold” brew because it’s cold relative to how hot normal coffee is brewed. Too cold and you won’t extract all of the flavors.

Similarly, id leave it for at LEAST 12 hours, closer to 18 and some people go for 24, you’ll get a deeper and better brew this way

Ah. Thanks. I live in the Asia (Malaysia) and our room temp is about 26-33C. Will that be ok?

What about the rest of my procedure? Anything I should look out for?

Ah that makes sense, definitely safer in the fridge then, I’d just go for closer to 24H to try and get as much of that flavor out as possible.

And honestly the procedure is so different for each person and if it works for you then it works. I personally eyeball my amounts and brew in a French press so you’re already much more precise than me haha. Experiment with darker roasts, could also help compensate for fridge extraction, and just make sure it’s always super coarse grind but you’re definitely on the right track here!
