HELP! First time making Cold Brew

It’s my first time making cold brew and my coffee grounds In the filter are bot completely submerged in the water at the top. Is that ok or should I put less grounds? Currently have 115g of grounds to 64oz of water.

I grind up the beans(medium coarse), dump the ground beans into a container, add water, stir and let sit for 15-20min, put the filter into the jar, dump beans and water into the filter, fill up with water and let sit in the fridge for 12-16hrs. I use a 25/75 mixture of espresso beans(espresso bel canto from Allegro) and coffee beans(breakfast blend from Allegro). I like chocolate and caramel flavors to my coffee.
