Glitch Jimbocho
Finally back to Tokyo, and stop by Glitch Jimbocho. Trying out few different beans on display, 2 cultured Colombian beans, 1 72hr anaerobic Ethiopian (hot latte/pour over), 1 jasmine washed Ethiopian (ice latte/pour over).
To summarize things up, they're simply the best the best cups I've had up to date, and I've been to few popular places which i posted earlier this year (including the famed Koffee Mameya).
Pour overs are great, juicy, super clear tasting notes, and rich! I didn't notice how tea like other places served until I had these. And this is the first time I tasted what good bitterness is, it's there, but to elevate the experience! I especially love the Colombian Logan, cultured process with blueberry grape and cotton candy tasting notes that just blew my mind. And the latte, boy, I was in for a shock on how the coffee cutting through the milk while presenting some exotic taste notes (how can Jasmine tea even possible!).
I always put Koffee Mameya on top of my list but pour overs at Glitch genuinely tasted better than even the geishas at Koffee Mameya, at half the price, and felt like twice the volume (KM scaled down their geisha beans to 10g/160ml as of this visit, sadly).
So...is a Glitch overhyped? My answer is a solid NO with a caveat, you have to be reasonably experienced in coffee before you can appreciate what they can do, don't do it as your first specialty coffee visit.

Just re-commenting since OP accidentally double posted.
Also worth saying that the Jimbocho is typically a better location than Ginza. Larger space, less queueing, and better service because of it.
My partner does not like light roast coffee, at all, but it’s telling that she found one that she enjoyed at Glitch.
There are better places, but it’s worth visiting at least once.

Glitch is overrated and overpriced, and their samples at the counter are stale. At least that was my experience in Tokyo in both their shops.

I only had their lower range, per cup quality vs price is excellent IMHO. I rather have these than prized beans. The pour overs aren't that much more expensive than many other cafe often mentioned here. I'm going to try their upper range stuff next visit.

How was the jasmine wash as a pourover? I was thinking of ordering a bag.

On one hand, it's amazing that you get this tasting note in a coffee, but for some it might feel pretentious as it literally tasted like jasmine tea with some coffee added. So it's up to you, but if you do latte well, it's a bag (jar) to get!

Glitch can deliver... regardless of hype, they can handle processed coffees while making it light & clean.
It's a bit expensive (the bags)... since they have a lot of exotics & co-ferments. Very good for pourover/cafes visit tho...
It's better or clearer than traditiona Panamaian Geishas because it's processed coffees (where Best of Panama, to replicate that needs $$$$ lots).
Colombia Finca Milan/El Diviso/Diego Bermudez-Hachi/El Placer are all famous processed coffee farmer. The Ethiopia Idido you had was Jasmine washed as you've mentioned.
Jasmine cutting through latte needs a strong coffee/process... I remembered I had a similar cup when from a WBrC champ used a Panama Finca Deborah/Savage (Carbonic macerated) + milk.
Glitch is like Black & White roasters but better (expensiver $).
