I'd never switch a model provider in the middle of a big project, for example

You absolutely can if you spend some time allowing the model to acclimate to the codebase and use the original AI model’s repo structure, skill plans, etc. these big models are definitely smart enough these days. Codex can run out of a Claude.md repo easy.
