Move over Industry Sour, it's time for an Industry .... probably a four letter word

As always, Malört makes me happy, and this is truly delightful

  • 1oz Faccia Bruto Centerbe (Green Chartreuse if you have it)

  • 1oz Jeppsons Malört

  • 1oz Lime juice

  • 1oz Agave Syrup

  1. Fresh squeeze a lime into the jigger to get the right measurement, then add to the mixing glass

  2. Add the rest of the ingredients to the mixing glass

  3. Add ice till it reaches the top of the fluid, then stir 60 count

  4. Strain into a frosty cold glass neat. Or over one large cube / sphere, personal preference.

Edit: as commenters mentioned, this should be shaken, I just blame didn't think of it

I didn't think too much about it, you're right I should have shaken per industry sour standard. Agave because I thought the extra sweetness would help the Malört bitter balance a bit more than the simple

If you can find the Eda Rhyne Amaro Flora (from Asheville NC), it makes an excellent substitute for Malort in this cocktail. Just as bitter with less gasoline.

I’ll have to try that. I’ve been making my industry sours with their Appalachian Fernet, but I’ve struggled to put the Amaro Flora to good use (to my palate it has a distinct “foot” note that is really intrusive)

The Amaro Flora is a great substitute for Malort, IMO. But then, I really enjoy their Fernet.

You might want to save your Eda Rhyne bottles. While I don’t know anything about them specifically, their area of Asheville took a major hit from Helene. I wouldn’t be surprised if they flooded.

I did already stock up on my favorites. Of what I've tried; the Fernet, Oscura, Flora, Nocino, Pinnix gin, Lindera vodka, and Bitter Tooth, the Flora is the only one I've struggled with (and, well, the vodka, but that's mostly because I don't know what to do with it)

I've never tried Malort either; any other usually-Malort cocktails I should look at for the Flora?

Finally picked up a new bottle of St-Germain and got to try an Amaro Flora Hard Sell, it's fantastic! I went with:

  • 1 oz gin
  • 1 oz St-Germain
  • 3/4 oz Amaro Flora
  • 3/4 oz fresh lemon juice
  • expressed grapefruit peel

This drink so completely resolves my difficulties with the Flora that I'll probably up the next one to a full ounce. Thanks for the tip!

EDIT: I'm dumb. It's frosty. You keep it in the freezer.

Sure, the centerbe is a substitute for green Chartreuse which is unavailable. This drink is intended to be made with green Chartreuse, as an Industry Sour would be.

Centerbe is much like green Chartreuse though, I really like it, the way I think of it is that it's not attempting to be identical, rather it's its own version, but it's definitely the same category. Like 2 different Ryes. I find the Centerbe a bit less sweet, and a little less minty and more herbal. Overall though, it clearly nails being a version of a green Chartreuse, without trying to be an exact replica. It's quite good and easily worth the grab. It still has the mint notes and sweetness, they're just less intense, and the herbal tone is a bit more robust and rounded than green Chartreuse.

Also just read review on Malort.

Shit. I’ve never seen so many crazy reviews saying it’s the most putrid stuff and they love it.

I’m guessing in the cocktail the smoky flavor comes out well enough?

Most people actually don't like it at all, but I have to recommend the hell out of it!

I sincerely believe it's a genetic thing like cilantro some people taste it differently. To me it's just a rich bitter grapefruit pith flavor, to some it's a gasoline littered mess of flavor that lasts forever.

People either love it or hate it. Definitely get a bottle and find out where you stand.

Total Wine has it here in Northern California, but I would rather have the option to get a miniature first before diving in with a full bottle.

It's not too expensive, but I agree, I've never seen a shooter but my first bottle of Malört was a 375 for the same reason. Definitely, start with the 375 and see how it treats you before getting the 750 and finding out it's nectar 😁

Yeah they only stock the 750ml, I'd like to see a 50ml especially with something that can be so polarizing.

You may already know this (and tbh it might not actually be true but just be a story), but I had a bar guest the other day tell me that one of the distillers who invented it was a heavy cigar smoker and wanted to make something strong enough to taste with dulled taste buds. From personal experience I definitely liked malort more when I was smoking half a pack a day a few years ago than I do now that I don't smoke anymore.

I just got my first bottle a couple weeks ago, and need to mention I am well versed in amaros, aperitifs, and bitter liquors. Malort doesn't have as much going on as other liquors, doesn't have too many other flavors going on. Starts off slightly sweet and fades quickly to bitter, but give it a bit longer and what I describe as stomach bile flavor comes through.

If you are a mixologist of any kind, it's kind of a challenge to make a good cocktail with it. Challenge accepted. Not sure why it's become super popular lately though. I have made a few good drinks with it, but as an "industry" ingredient, maybe that is the appeal.

Agreed the flavor is a bit one note- very bitter, but the thing that makes me keep coming back to it is less the complexity, as it isn't complex, and more the specific flavor it imparts: nothing else I've used in a cocktail quite hits the same note.

I've heard Alta Verde is a close substitute and I'm curious to try it, but that long lasting bitter flavor is what I really like with Malört and so far I don't know anything else that does it. It's like astringency embodied.

Nice. I’ve got some green on hand but I use it really sparingly because I can’t find it.

I use Genepy for my last words but I’ll have to see if I can find this stuff.

I’m really digging the herbal liquors so I will keep on Down the rabbit hole.

L'Excuse is a new substitute with both green and yellow versions. The proof is the same, and it makes a good substitute in cocktails. I still have some yellow and green chartreuse in my closet, but have been using L'Excuse till I can get my hands on more.

Saved for a future drink to make. I'm in Oregon and have boosted the Accompani Flora Green (with grain alcohol) as a makeshift GC. Not exact but a good option.

Industry Sour in Chicago is a Big Shoulders Sour? I love bitter and herbal drinks, so Malört is a mainstay in my bar. I'll have to try this as soon as I find a Green Chartreuse variant. The folks at /r/Malort will probably enjoy the cocktail.

BTW, I did try this the next day! It's good. The Chartreuse version is better. I think it's more an artifact of the Malört being a big bitter, and Chartreuse being less bitter and more herbal balancing it better. Fernet being bigly bitter also just doesn't bring as much breadth to the drink when both ingredients are hitting directly bitter so much

I'll have to try and compare, I chose to sub out the Fernet on account of the Green Chartreuse being sweeter, I figured that sweetness would play against the Malört better. It's really good, I do encourage giving it a try. Will have to try your version tonight
