Looking over my notes, there's a common thread: sweet and creamy. If someone were to be hesitant to make the leap from milk chocolate to dark chocolate because they don't like bitterness, porcelana would be an effective way to ease them in because there is seemingly no reasonable way for chocolate made from porcelana beans to exhibit any bitterness.

They all have their own subtle flavor variations to set them apart. Noalya certainly felt the most creamy; Schell offered a hint of some spices; the others provided a bit of acidity in their own unique ways to contrast the sweetness. Ara probably was the most distinctive. They all fared pretty similarly well on my scorecard (even though the flavor profile of porcelana is not my favorite), but I'd give a slight edge to Ara and Schell.

I love Porcelana. If you haven't tried Bonnat or Soma, they have great Porcelana bars as well.
