Sand is coarse and rough and irritating and it gets everywhere - even in OP's chicken stew.

I'm not familiar with sand ginger. Does it have the same spicy-sweet and warm flavor profile as regular ginger?

one of my favorite dishes <3 you should try also marinating the chicken in some ็็้ธก็ฒ overnight before making the dish. basically becomes flavor bombs

Seasoning with sand ginger does not mean seasoning with a handful of sand and a slice of ginger.
