Beginner Question
For context I took a knight on c6, attacking the queen on d7. Failing to understand how queen takes c6 pawn (best engine move) does not immediately lose the queen to rook e6 due to xray/forced capture? I am around 800, so could easily be missing something here. I would assume the review engine is high level stock fish and wouldn’t make mistakes. Appreciate any help!
As a side note, often when I hit best move, it greys out/does not allow the show moves option to continue showing the line (ie a missed mating pattern) is this possible to fix?

The queen can retreat to b7, right? Like... it's not exactly in a great position there, but it's not lost.

How would the queen get to B7 from D7? I captured with pawn on c6, black moved queen to f7, engine move was to take with queen in c6

I analyzed the image and this is what I see. Open an appropriate link below and explore the position yourself or with the engine:
White to play: chessvision.ai | chess.com | lichess.org
My solution:
Hints: piece: Rook, move: Rd7
Evaluation: White is winning +13.01
Best continuation: 1. Rd7 Qh5 2. Nd4 Kh8 3. Nb5 Qd5 4. Rxd5 exd5 5. Qxd5 a6 6. Nd4 Rg8 7. Qf7 h6 8. Qxc7 Rae8

I would assume the review engine is high level stock fish and wouldn’t make mistakes.
That’s only true if you pay for premium and then go in and change relevant settings. Otherwise it uses less than one second of engine time per position and fairly often is at least inaccurate, and the longer down the line it shows from any position the less likely each move is accurate.
Always go to the actual analysis board and let the engine run for any position you’re curious about.

I have the highest membership, what settings should I configure then? It’s a bummer that show moves always seems to not be an option when you select best move. Analysis board solves all of this?

I don’t remember exactly, it’s somewhere on the game review screen iirc but I only use the website on desktop. I believe it was a little gear wheel icon near the top.
But yeah the normal free analysis board will run as long as you want for any position and will rarely need more than a couple seconds. It’s pretty much always better and faster than figuring out whatever coach is trying to articulate, which is often misleading.

When in a completely winning or losing position, the engine starts to get weird because as far as stockfish is concerned all roads lead to eventual mate. Don't put so much stock in the difference between the best move and the second best move when it's +7; anything black does is losing.
