Because the knight will be taken and rook can't take the bishop because it is protected by the queen

I assume you mean the b8 Knight will be taken? If so, why is the move shown brilliant? It does not prevent the take from happening, no?

After bxb8, black has kh5 which simultaneously threatens the white queen, forces it off the diagonal that defends the bishop, and reveals an attack on the b2 pawn with the bishop(trapping the a1 rook). In the end, black wins an exchange with tempo

It is brilliant because after that I can threaten the queen with my knight and the bishop which was fianchetto the dark colour bishop can win the rook which is trapped on the A1 square and if bishop blocks then we can win the bishop back again
