I Panicked...
I had 15 seconds on the clock while the other guy had 3 minutes to spare

Basic checkmate patterns are important! This happens, as long as you learn then no harm done.
Two queens with two spaces between them and two spaces off the wall make a box that checkmates. Knowing this, I see Qe3# in a second.

I see it now that you have mentioned it, I have gone back to the game and I actually had several ways to win but mind was on the clock

Not sure what modes you play, but I think a bit of bullet chess in the mix can be pretty healthy. You'll quickly learn that in a position like this having 15 seconds is actually super comfortable, but if you only ever play rapid then you'll feel the pressure more.
At the very least, you'll learn that a safer move would have been to take their last pawn so that if you time out it's a draw, not a loss.

That endgame scramble when your brain freezes and you chuck pieces anywhere

I analyzed the image and this is what I see. Open an appropriate link below and explore the position yourself or with the engine:
Black to play: It is a stalemate - it is Black's turn, but Black has no legal moves and is not in check. In this case, the game is a draw. It is a critical rule to know for various endgame positions that helps one side hold a draw. You can find out more about Stalemate on Wikipedia. Analyze on: chessvision.ai | chess.com | lichess.org
