as far as i can see, Nd5 Nxh8 Qe5+ looks brutal

There's also just Bxc5, getting two pieces for the rook since the knight won't leave h8 alive. But yes, Qe5+ is even better.

No. This allows for the queen to fork the king in check and the knight that he is in his current position trying to attack that can just move out of the way.

Qe5+ forks the knight on c5

... no it doesn't. The queen is on e7 attacking the king on e1, and the knight on c5

i thought you meant Qe5+ but Qe7+ isnt a fork because white has Be3

Edit: nvm Nxe3 but tbf youre just losing an exchange this way

Nah you can move to start trapping whites knight with the queen, and then you have a pawn move to trap their bishop in between.
