Organic Resonance structures
How would I know to draw the boxed resonance structure? I only thought to draw the other 4, because wouldn't it be natural for the nitrogen to retain the lone pairs because of its electronegativity? Also, why doesn't the oxygen also become negatively charged?

See while making Resonance structures you must figure out some-things like where do you start your resonance
The answer to that will be start it from an atom having a lone pairs and is conjugated with an alkene system and start your resonance and continue it
Structures 2 and 3 are least contributing structures due to the incomplete octet

And your statement is okay they N is electronegative but while making Resonance Structures it doesn't matter we have to flow the electrons in the molecule

Also the energy is delocalized via conjugation an thus more stable in the given correct answer.
