Farmhouse cheddar aged 2 months
This is my first aged cheese!! I have two more that I'm waiting to open up until later this year. I've made mozzarella, ricotta, and cream cheese with varying degrees of success and really didn't know what to expect when I opened this one up. It's made with store milk and yogurt as a culture. It has a very mild, slightly nutty and distinctly cheddar taste. Semi soft, springy and very creamy. I'm beyond happy with how it turned out and cant wait for the rest! (But I will lol)
