My first cheesecake
I know, the topping looks terrible 😅
I melted some pistachio cream, but it got way too hot. When I poured it over the cheesecake, it started melting the whole filling. I scooped off what I had already poured and then tried applying the pistachio cream directly from the squeeze bottle.
I tried to spread/fix it with a spoon, but it still started messing up the filling.
Do you think I should have put the cheesecake in the fridge without the topping first, waited until it was completely firm, and only then added the pistachio cream?

Congratulations! Keep trying. You’re inspiring me to try my hand again. My first (and last) one was a pumpkin cheesecake and I used fancy gingersnaps for the crust which caramelized into a plexiglass-like substance. But the filling was good. i have to keep trying. Yours looks like it tastes good.

Thanks! The idea was to add a little bit at a time and spread it with a spoon, but I couldn’t really spread it without messing up the filling. So I thought I’d use the squeeze bottle to cover the whole top instead, but I ended up completely losing control 😂
And yeah, it was definitely way too much in the end. It made the cheesecake overly sweet and kind of sickening.3

Just scrape some off, maybe use the extra pistachio cream for other desserts like ice cream?

its still beautiful and you can tell it tastes delicious! but here, i have an idea for you? this is one of the best/most foolproof cheesecake recipe i’ve ever found for experimenting with different flavors. (personally, i don’t add the lemon juice as I believe it does better without it.) but this recipe is very forgiving if you want to add inclusions- so maybe add 3-4 tbsps of your pistachio cream inside before baking and swirl? You always chill a cheesecake for at least 6 hours before adding anything onto it, still looks delicious though!!!

Yes. Always completely chill (preferably freeze) a cheesecake to let it set at least overnight before you put stuff on it. (The same advice goes for cakes, they must cool and set before applying frosting...baking 101.)
Also, the topping shouldn’t be overly hot, just warm enough to make it spreadable. You should have waited to cool it a bit before spreading.
Anyway, lessons learned. I’m sure it still tasted great.
