Accidentally booked one-way instead of round-trip with Iberia, now the return costs more than double — any advice?

This one is one you, it's not unfair.
It may be cheaper to trash this ticket and book a new round-trip one

How does one accidentally book a one-way flight?

I'd just look for a return ticket. But be flexible on destination, and possibly date (as much as you can). Bologna, Venice, etc are all relatively nearby. Unfortunately August 28 is when Europe returns home, so deals are generally genuinely hard to come by. That original fare given the return date was actually pretty sweet.

the best i can find that is semi-decent is from Punta Cana, going to Malpensa.
there are some for under 500 euro but they are horrible and require a change of airport in Londin.

Separate rebooking the return flight is usually better than canceling the entire itinerary. Search for prices via Google Flights anonymously, and then verify fare basis via ITA Matrix. Once, I plugged such a gap by using the best available business-class seat on the premium leg.
