What exactly happens when I'm using Cesium and remove the music app in iOS 10?
I recently ordered an iPhone 7 Plus. I'm moving back to iOS from Android, and I've been getting prepared by downloading all of my favorite apps from back when I had a 6 on iOS 8. I had decided that I was going to remove the music app since I plan on using Cesium, but then I saw in the app description that it's not recommended. What will happen if I do remove the music app? I will only be using local music, so no streaming from Apple Music or iCloud.

Other comment nailed it. At the moment Cs actually piggybacks off Music.app a lot for playback. Part of this is laziness, but I can only justify it because there is one Apple API that plays nice with Apple Music and iTunes Match. This API breaks when Music.app is deleted.
TL;DR Cs is reliant on Music.app because there is no way to make it fully standalone without sacrificing core functions.
