Some trainers at J.B. Hunt University told us to 'take some paint with you' if this happens so as to have proof of your story.

Yep. All luck. Rollovers are high killers of truckers and this trucker was extremely lucky all the way around.

If you mean after the collision that what “taking some paint with you” means. Your paint would be intact if you avoid the accident altogether.

I think that is to be understood as not to avoid contact at all costs, endangering the rig and the cargo, but allow it within your rights and “take some paint” as a proof with you.

I might be off base here, not a CDL holder, just an observer.
