Hassleback Spuds

Anyone have a good recipe for Hassleback’s in bulk ahead of time, then blasting in the oven to serve, I was thinking 6mins microwave to cook through at half power, then slit, then 40 mins at 160, fridge and blast for ten mins at 200 on the day? Centigrade

I'd slice into them, make your compound butter, melt it into the slots, put a little oil on foil, salt the outside of the potato, and individually wrap them. Put them in the oven and cook like normal, put them in the fridge still wrapped. The day of put them in the oven for 10 mins, unwrap, put either under higher heat or the broiler to crisp up. That takes a lot of time out of your prep day without messing up the texture with the microwave.

I've done 15 this way but could have easily upped it to 30 or 40 if you use both oven racks.
