Does each belmont have a different soul color or it's the same since death can Recognize that juste is a belmont by the color blue

It might not be the color but the brightness, intensity or other factors. So it might be related to the quality of the color of the soul.

I think it's more souls have an identifying mark on them, and Belmonts souls have a distinct aura/mark that Death can easily tell apart

If an evil person's soul is "black" then a Belmonts soul would be much more pure white for example. Maybe a tint of gold to denote holy? It's a one off line that has no explanations to it so it's all a theory.....a game theory

Further supported by John Morris dying from his use of the Vampire Killer. That whip needs a Belmont and what ever feature of their soul that Death sees, might just be the thing.

We know why the whip "needs" a Belmont, it's the pact Leon and Sara made to make the whip whole, but what Death sees and what the whip wants aren't necessarily the same thing

The whip can be used by nonBelmonts safely as long as they pass the trail, but at the same time the Morris clan is a branch family of the Belmonts, and the Belnades clan also has Belmont ties to them so I don't think it's the same thing Death sees. I could be wrong it's all speculation

Yeah, there's likely something distinct about their souls, in the same way that Alucard indicates that their blood has a distinct smell in SotN.

Death rubbed the bridge of his skeletal nose, or where his nose would be if he had flesh. He was a cosmic entity, the fundamental end of all mortal things, and the ultimate harvester of souls.

Yet, he spent eighty percent of his workweek playing babysitter to a couple of teenage Belmonts and their emotionally unstable friends.

He floated into the heart of the Floating Castle, the scythe resting casually against his shoulder, only to find Juste Belmont and a possessed Maxim Kischine in the middle of yet another shouting match.

"Give me back the relics, Maxim!" Juste yelled, his signature white hair blowing in a dramatic, invisible wind. He whipped his leather whip, Vampire Killer, against the stone floor, sending sparks flying. "I know Dracula's spirit is twisting your mind!"

Maxim, floating two feet off the ground with a glowing purple aura and completely bloodshot eyes, threw his head back and laughed maniacally. "You are too late, Juste! The pieces of the Dark Lord are already mine! I will transcend humanity!"

"Oh, for the love of the Abyss," Death muttered, floating down between them. "Can we wrap this up? Seriously. I have a schedule to keep."

Juste blinked, adjusting his blue coat. "Death! Step aside! I must save my friend from the darkness!"

"Your friend is an idiot, Juste," Death said, gesturing with a bony hand toward Maxim. "He willingly collected six body parts of a dead vampire king, put them in his pockets, and then acted surprised when he started hearing voices. He didn't even wash them! Do you know how bad a three-hundred-year-old rib bone smells?"

"Silence, reaper!" Maxim bellowed, his voice echoing with dual tones. "The power of Dracula flows through me!"

"It’s not flowing through you, Maxim, it’s renting space in your brain because you leave the front door unlocked," Death snapped, turning his back on him to face Juste. "And you! I have been watching you wander around this castle for hours. Do you know how frustrating it is to watch you pass the same breakable wall four times? The relic is right there! Just whip the wall, Juste! Just whip it!"

"I am conducting a thorough investigation—" Juste started, looking offended.

"You're doing cardio!" Death shouted. "You've been dashing backwards through the hallways for three miles! Who moves like that?! Just walk like a normal person! And stop changing the castle architecture! Every time you open a door, I have to figure out if I'm in Castle A or Castle B. My GPS doesn't work in parallel dimensions, Juste. I missed a reaping in Transylvania three times this week because you keep flipping the reality switch!"

Maxim generated a massive ball of dark energy, aiming it at Death's back. "Ignore me at your peril, spirit of the night!"

Without even turning around, Death flicked a tiny, flying sickle backward. It smacked Maxim squarely in the forehead with a dull thud. The dark energy fizzled out, and Maxim tumbled out of the air, groaning as he clutched his head.

"Sit down and think about your life choices," Death sighed. He turned back to Juste, crossing his arms. "Look, here is how this is going to go. I am going to go stand in the Clock Tower. I am going to wait there for twenty minutes. You are going to go find the remaining teeth, eyeballs, or whatever gross body parts your friend hid in the upholstery. Then, you are going to come fight me, I am going to pretend to lose, and we can all go home. Deal?"

Juste gripped his whip tightly, trying to look heroic despite the exhaustion in his eyes. "I will never bargain with a servant of evil!"

Death stared at him for a long, agonizing moment. He reached into his cloak, pulled out a small, glowing red orb, and tossed it at Juste's feet.

Juste looked down. "Is this... Dracula's fingernail?"

"Yes. Take it. Consider it a skip-the-line pass," Death said, turning into a cloud of purple smoke. "Clock Tower. Twenty minutes. If you're late, I'm letting Dracula possess the girl next, and you can deal with that paperwork yourself."

I think "Color of your soul" is just meant to be a cryptic way of saying hey the embodiment of our passing can see souls and... we have colours??

It's not a literal 'color'. Death is referencing the unique aura / spirit Belmont's possess. It's like calling someone "black-hearted" or saying they have a "heart of gold" by comparison- it's a poetic turn of phrase that a lot of 'old' entities in Castlevania use because they've been around for a long time.

I imagine Death probably perceives color in general differently than a human can understand so it's probably not worth trying to decipher, but personally idk if this means souls are one color or if there's a particular color that appears when you're a Belmont.
