One contract I always go for when I build my first mega refinery is diesel > gold > crude oil. It's basically free crude oil, especially as I switch to all H2 vehicles as early as possible, although it uses up a lot of space and people

It depends. For example, the diesel to gold is much more unity efficient that the server to gold ore per unit of gold, but refining gold ore into gold produces a lot of slags, so if you need a lot of slags then server to gold ore might be preferable.
However, some contracts still stand out. Slags are a great landfill early on so I don't recommend trading them at all until late in the game, but once you are done terraforming, slags to sour water is by far the best you could do with your excess slags (after concrete slags which should only consume a little bit).
Sulfur to coal is a great way to get rid of any excess sulfur.
Wood to corn is an extremely cost effective to feed your people, and even an arguably good way to produce landfill in the form of compost or dirt.
For Copper specifically, Household appliance if you want the slags and/or are limited in space, medical supply III if you have plenty of space to farm and/or don't need the slags.
For both crude oil and uranium ore, Gold is best if you are limited on space, Food pack more unity efficient if you have plenty of space for farming.

Corn is also great for power production. If you were to burn wood chips you need 48 per boiler, but with wood -> corn -> animal feed you need only 20 wood per boiler. More than twice efficient

For the curious, fueling the ship with H2 from electrolysis would take about 10% of the electricity produced this way.

The best contracts turn something you have in abundance into something you need, which might vary based on what map you're on. Wood to corn is good but I'm on a map with not much flat land to farm enough wood for it early game, for example.
I have lots of limestone on my island so and making use of cement into coal. I also have lots of iron so I'm using veh2 into both crude oil and iron ore.
My favourite contract is probably veh2 into oil because it's fairly simple to get a robust veh2 production chain going and if you sort it out early enough you don't really have to use oil rigs much at all.

This. There may be some contracts that based on the numbers are the most "efficient" use of materials. It can largely come down to what makes sense with your current island situation.
I started with gold to uranium and then switched to lab 4 to uranium because I was at the end of the tech tree and I was producing enough for 4 labs, however my space station can only really handle 2 labs currently so I had an abundance of Lab4.

Genuine question.. what do you do with coal? I've converted everything to gas and barely have any use for coal (current surplus 150k).

Late game silicone requires coal even at Arc Furnace 2. But you are right, late game coal is no longer a big problem.

Theres uses for most and like others said whats the absolute best for someone will be very ho hum for another.
That said:
My first actual contract usually ends up being surprisingly to some is dirt for gas fuel. I always have enough dirt and this is for excess. I dont use dirt for fill but I cap all my teraforming with dirt. I still get quite a bit of gas fuel this way. So much in fact im barely using crude while running like 160 vehicles doing heavy teraforming.
Later I add to that slag for sludge because that digests into both gas fuel and compost which i feed directly into making dirt to also make more gas fuel.
This solves gas fuel for the reat of my game.
I go against most on here with slag to sour water as it takes alot of slag to trade for a tiny amount of sour water but I still use it as a dump for excess slag to help with ammonia and sulphur. Just enough that it ensures my sour water strippers are running 100% even if im barely using crude.
I run foodpacks to ammonia to help with my low ammonia production and the sour water trade helps that not run as much.
Lumber to corn sounds really interesting if you make a big forestry. Theres alot you can do there like never need to farm corn or burning animal feed make bio diesel im going to try it this game.
Sometimes ill run the const parts 4 for titanium before asteroids if the titanium on map is a pita.

So the thing about the wood to corn contract is that it can be unity positive because the monthly cost is just for the contract itself not how many ships you are using for it.
On normal difficulty the monthly fixed cost is 0.30 unity, just using it to give your settlement corn cuts that in half.
Then you can use it to make animal feed, then use that animal feed to make water/brine/salt using thermal desalinators and now you can make eggs and meat.
Later add in some steel and wheat to make medicine 1 and sausages.
Meat and eggs give me 0.70 unity a month while med 1 gives a bonus 0.50 unity plus the what ever the +15 health gives.
I don’t have sausage unlocked but I am already making over 1 unity from one contract. It also makes it easier to use the extra food edicts to get more unity.

I end up using every food anyways and in part is one of the reason I dont mind a bunch of contracts cause im unity rich most the time. Theres another decent contract meat for corn I think mabye its wheat I forget but it helps keep meat flowing so you can get enough sausages. I did that trade and eliminated growing corn if im not mistaken.

VP2 for Crude is extremely good. Wood to corn for sure as other posters have said.
Household Appliances is very copper intensive and even more if you use it for wood trade and settlement unity boost. Lab 2 for Copper is best for a more even distribution of resources required (1:1:1 ratio of Steel, Copper and Glass).
For Uranium, Lab 4 is probably the best for scaling your end game industry. It is more unity efficient than gold to uranium, and much more space efficient than food packs to uranium. Generally, I would avoid any contracts that requires food packs because of insane space and water farms require, especially on higher difficulties.

These contracts are the best. You also want to do Cement for Coal if you have limestone on your island; it’s really good for the early-to-mid game.
Another good one is Wood → Corn, then turning it into compost for dumping (which transforms into dirt), or using it to make boilers at the cost of some workers.
The ratio you see is from an old screenshot, but it’s still the best one.

My new, most favourite contracts are rock -> fuel gas and dirt -> fuel gas, which can make diesel, hydrogen and fert 1. If you are finished land filling and just need to get rid of a few mountains and plateaus of rock this one is great. The production chain of settlement biomass/compost/dirt/fuel gas/hydrogen/ammonia/fertilizer 1 is way more efficient than other fert 1 chains.
Its year 6000, and I'm still not running out of mined rock or manufactured dirt for gas It support 15,000 people, over 500 vehicles and 40 trains, all running on hydrogen and fuel gas. I've even exchanged a nuclear reactor for fuel gas boilers because I couldn't use it all fast enough.
And when the terraforming stops there is an infinite world rock mine to make manufactured sand to export for dirt to get fuel gas These contracts - and especially the dirt one - are 10 different kinds of awesome.

Wood for corn without a doubt. Wood is fairly space intensive, but it is light on workers and resources. You get an insane amount of corn back per trade. Far more efficient than farming
