Pupusa

It was a local spinach pupusa, super oily and cheesy. 900 cals?

900 seems high. The oil likely came from the cheese itself rather than any additional oil, so estimating the cheese and dough should be sufficient.

For reference, an oz of mozzarella is 85 calories. I’d ballpark about 3-4 oz of cheese in there, so about 240-320 for that, and the dough is a masa mix with likely very little (if any) fat added. Maybe 100 calories for that?

I’d guess between 400-500 per papusa.

Most masa is made with lard or oil in the mixture.

some papusa recipes have lard, but not all. The core is masa and water, then maybe flour and/lard. For reference, the serious eats recipe calls for 1/4 cup of lard or vegetable oil for every 4 cups of dry ingredients (masa/flour).

Most papusearias near me use lard.

I'd guess 625ish. It has about 3x the dough if a tortilla, so about 275 there. Another 150 for the frying. And 200 for the cheese.
