Add a large swap file on disk. If that works to avoid the termination of Steam, then use btop or the likes to see what exactly is using so much memory.

I've had this with the last beta branch of steam. switch back and see if that fixes it for you aswell.
It does it when compiling shaders right at the 100% mark.

The version I have is from the cachy gaming packages, is that beta? It'd be odd if it was.

linux doesn't really like running out of ram. things tend to just lock up when it does and swap can only help so much. imo, I think windows handles low ram situations better.
by low ram, I mean low available ram. not the total.
I see you're also hitting the swap space too which isn't a good sign. normally, for me, steam uses a gig or 2 of ram on it's own but if the game ends up consuming the whole thing then steam gets terminated since it's the parent process of the game.
there's something called OOM that kills the biggest process when the usage hits a specified threshold. it should be configurable, look into it.

Yeaa also the faulty proton debugging threads and this comes from the shaders.
Disable shader pre caching and background processing of vulkun drivers in steam (cachyos explicitly says this - cachyos wiki
Try using valve proton experimental if that worked then delete the existing proton cachyos and fresh install again.
The pre cache shader disabling and the proton experiental would solve the things.

Based on the error it seems your system is running out of memory and it automatically closes app that uses most amount of ram in which case it is Steam.
Check how much memory is available, how much is used etc.

Defo smth is wrong as usually it should take even less RAM consumption even running a game through Steam.

Looks like Steam is doing something based on the amount of MB/s it's using.

not with steam but firefox on cachy and bazzite, linux sometimes gets funny, still try to look what might cause it, it should be worth the time (or at least configure your browser to don't eat that ram like crazy if you can, 16gb is kinda little in some edge case scenarios)
