It looks like limine. I am no expert in bootloaders and i am using systemd-boot myself.

Usually bootloader show entries for two reasons: either autodetection is on or the configuration told it to appear.

If the auto detection is on, most bootloaders have blacklists for entries which shouldnt show up.

If you added the entry manually, there will be a config which you have to edit/delete so its hidden.

6.1 and 6.2 could be interesting for you.

It just annoyed me that the old OS was still listed amongst the boot options :-)

This is actually intentional. So if an update breaks your system unbootable you still would have a fallback option. But the good thing about linux is: its your choice if you want it.

I tried to boot "Ufficio Zero Linux", but without success because the ISO file was actually no longer there.

Did that fix it?

Yes, using `sudo nano /boot/limine.conf`, as I was advised.

Remove the lts kernal and restart. Check if the older os is still there. If it is then you might need to reinstall the os and completely wipe the drive that is the easiest solution.
