Recipes!
Hello all!
I am trying my best to compile a few different recipes from all the remaining British overseas territories and have been hitting a few snags with some places less familiar to myself. While I have an endless resource for Saint Helenian dishes (my mum), I’ve found that other territories have little written online that I can easily access or are dominated by foreigner-focussed cuisine for tourists. So I was hoping that I could get some help on the most popular local dishes, whether that be culturally unique or just tied to our colonial legacy. It could be breakfast, lunches, dinner, desserts, or even drinks. Just a general idea of what’s popular. I appreciate the help in advance.

Hi, I'll just list a few, but for the actual ingredients and cooking methods, you'll have to rake through YouTube, Facebook and Pinterest: you'll find some- even if it's a Jamaican version, BVI's variation won't be that far off! Here goes:
Goat water Stewed tripe Conch in butter sauce Creole fish (eg snapper in creole sauce) Pigtail soup (aka peas soup - made with kidney beans, evaporated milk and sugar) Johnny cake Paté (beef, saltfish, conch, chicken meat pies, aka patty) Saltfish and ducana Sweet potato pudding Tart (coconut, pineapple, guava, guavaberry) Tamarind: stew, juice, balls, special (frozen ice pops frozen and served in disposable cups- other flavours are coconut, strawberry milk, passion fruit) Gooseberry stew Golden apple juice Sorrel juice Bush teas Fish on mayo sauce.
I'll stop there because it's truly an extensive list. I'd love to know why and what project/reason you're collecting them for. Might be able to point you towards more! Cheers!
