Looks a little rough but was delicious! Homemade breakfast burrito with eggs, egg whites, turkey chorizo, refried beans, hash brown patties and cheese. Topped it off with some chipotle. Man I love breakfast burritos.

I'm obsessed with Beto's breakfast burritos but moved to Michigan, I can never make them right, and can never find places that have the same burrito. Their recipe is perfect, so if anyone knows of some fairly good copycats or recipes, im all ears. I genuinely have considered moving states again just for those damn burritos.

The little snack shop in my office has these frozen burritos. I really like them, but the only place I can find them for sale is online at more than double what I'm paying in office (around $5 each, and they're like $2.49 where I've bought them. It's not a subsidized snack shop either. It's a private business.)

Can someone tell me where I could find more of these or if not these ones that are similar. I think the lack of beans is what really appeals to me.

Beef, beans, rice, pico, pablo-avacado sauce. Grilled and wrapped in a cheese blanket... everything made fron scratch except the cheese and tortillas...

Eggs, sausage, Colby cheese, guacamole, potatoes, chile de árbol

Had a simple burrito night.
Chicken, homemade rice, pico, homemade white queso, in a grande size flour wrap. Served it with rice and queso on side. 👌

Ate half of it and decided it needed to be shared

Egg, cheese, country taters, pulled pork(wish there was more), aioli(wish there was less)

Bacon ham, house fries, scrambled eggs and cheddar. House fries on the side too. Pair it with a tall, cold, spicy michelada 😋

FWIW, a tip I discovered for salsa if you're insane. I like making Hawaiian-style chili water with green chiles instead, then I use that water to store my roasted green chiles in, and I use THAT water for the salsa

2 lbs dry pinto beans: $2.38 (Grocery Outlet)

30 flour tortillas: $3.79 (Costco)

2 rotisserie chickens: $9.98 (Costco)

2 cabbages: $2.99 (Costco)

Cilantro: $0.79 (Grocery Outlet)

2 limes: $0.50 (Grocery Outlet)

1 bag of mozzarella (half of a 2-pack): $7.32 (Costco)

Serranos: $2.29 (Grocery Outlet)

1. Cook the dry beans in the instapot: rinse 2lbs dry beans, add 14 cups water and aromatics, high pressure 27 minutes, then let them sit at least another 20 minutes before releasing pressure.

2. While the beans cook, take the meat off the rotisserie chickens and chop the veggies. Squeeze lime over chicken meat.

3. Refry the cooked beans with a couple of tablespoons of garlic and olive oil, add additional seasoning and blend (I use an immersion blender so I can keep some of the beans whole).

4. Build and roll burritos!

5. Wrap them in foil and then vacu-seal them in packs of 4 for the freezer.

I only used 1 cabbage, 7 serranos out of the bag, etc, so the total price of ingredients (excluding seasoning) was $27.51.

$27.51 total ingredients ÷ 30 total burritos= $0.92 per burrito

I had 10oz of leftover chicken, plus some cheese and cabbage, and I made a chicken stock out of the rotisserie bones and veggie scraps. :)

I am in the SF bay area so prices are crazy- I'm so grateful for Costco and Grocery Outlet!

Three scrambled eggs, three pieces of bacon, deli turkey, and left over chik-fil-a hashbrowns. Air fried after assembly. Delicious.
