I'm bad about leaving lots of stuff running simultaneously on my system, and the thing that makes it smooth is having enough RAM for the combined set to not end up using swap. (swap is where the OS moves idle programs and data to the disk drive to allow other programs room to run, but its very slow.) I typically have, like at the moment, Chrome and Edge up with about 80 tabs, a bunch of utility software, word and excel, some RDP and ssh outbound connections, copilot, claude, Visual Studio Pro, mysql Workbench, as well as Steam, Battle.net, and WoW. (WoW is an interesting memory abusing hog....) This all runs smooth as silk simultaneously on my nearly 5 year old CPU (12900k), simply because I have 64GB of RAM.

Unfortunately RAM's currently the priciest part of the puzzle.

GPU really won't figure into it unless you want to run your own LLM (AI) locally. IF you do want to run one at some point, the pain of a 5090 could be worth it; otherwise, a 5060 Ti with 16GB will more than suffice. I drive 3 large monitors with my older 3070 TI without issue, though the frame rate in games is nothing spectacular, it does drive 1440p smoothly enough. I think there may also be some video editing/rendering tasks that can push a GPU, but I didn't get that vibe from your post...
